Ingredients

  • 1 gallon water
  • 1 cup kosher salt
  • 1/2 cup granulated sugar
  • 1 tablespoon dried thyme
  • 1 tablespoon dried sage
  • 1 tablespoon dried oregano
  • 1 tablespoon black peppercorns
  • 1 large onion quartered
  • 4 garlic cloves smashed

Instructions

  • In a large pot, combine water, kosher salt, and granulated sugar. Heat over medium heat until dissolved.
  • Stir in dried thyme, sage, oregano, black peppercorns, onion, and garlic.
  • Remove from heat and cool completely.
  • Submerge the turkey in the brine and refrigerate for 12-24 hours.
  • Rinse the turkey and pat dry before cooking.
