Ingredients

  • 4 tablespoons unsalted butter
  • 1 medium onion finely chopped
  • 4 garlic cloves minced
  • 2 tablespoons all-purpose flour
  • 3 14.5 oz cans diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 teaspoon sugar
  • 1/4 teaspoon dried oregano
  • 1/4 cup heavy cream
  • Salt and freshly ground black pepper to taste

Instructions

  • Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for another minute until fragrant.
  • Sprinkle flour over the onion and garlic, stirring constantly for about 1 minute.
  • Slowly pour in the broth, whisking constantly to prevent lumps.
  • Add diced tomatoes, sugar, and oregano. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Use an immersion blender to puree the soup until smooth.
  • Stir in heavy cream and season with salt and pepper to taste.
  • Simmer for an additional 5 minutes before serving.
