Ingredients

Salt and freshly ground black pepper to taste
Instructions
Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for another minute until fragrant.
Sprinkle flour over the onion and garlic, stirring constantly for about 1 minute.
Slowly pour in the broth, whisking constantly to prevent lumps.
Add diced tomatoes, sugar, and oregano. Bring to a boil, then reduce heat and simmer for 15 minutes.
Use an immersion blender to puree the soup until smooth.
Stir in heavy cream and season with salt and pepper to taste.
Simmer for an additional 5 minutes before serving.
