Ingredients

  • 4 medium zucchini spiralized into noodles
  • 1 lb 450g ground beef or turkey
  • 2 cups marinara sauce sugar-free
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese optional
  • Fresh basil leaves for garnish

Instructions

  • Prepare the zucchini noodles: Use a spiralizer to make zucchini noodles. Set them aside on a paper towel to remove excess moisture.
  • Cook the meat: Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until softened (about 3-4 minutes). Add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula.
  • Add the sauce: Once the meat is cooked, add the marinara sauce, oregano, basil, red pepper flakes (if using), and salt and pepper to taste. Let it simmer for 10 minutes on low heat, allowing the flavors to combine.
  • Cook the zucchini noodles: In a separate pan, lightly sauté the zucchini noodles in a bit of olive oil for 2-3 minutes until tender but still firm. Be careful not to overcook, as they can become mushy.
  • Assemble the dish: Serve the zucchini noodles topped with the meat sauce. Garnish with freshly grated Parmesan cheese and fresh basil leaves.
