Ingredients

  • 2 lbs lamb shoulder cut into chunks
  • 4 medium potatoes diced
  • 3 carrots sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups lamb or beef stock
  • 1 cup red wine optional
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • Salt and pepper to taste

Instructions

  • Prep the Ingredients: Chop your veggies and lamb, and have everything ready to go.
  • Season the Lamb: Sprinkle salt and pepper on the lamb chunks.
  • Cooking Instructions
  • Brown the Lamb: Heat olive oil in a large pot over medium-high heat. Add lamb and brown on all sides.
  • Sauté the Veggies: Add onions and garlic, cooking until translucent.
  • Add Liquids: Pour in the wine and let it reduce for about 2 minutes. Then add stock, potatoes, carrots, rosemary, and thyme.
  • Simmer: Bring to a boil, then reduce heat and let it simmer for 1.5 to 2 hours until the lamb is tender.
  • Serve: Taste and adjust seasoning if necessary, then serve warm with crusty bread.
