Ingredients

  • 1 cup almonds chopped
  • 1/2 cup pecans chopped
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons coconut oil melted
  • 2 tablespoons erythritol or monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • A pinch of salt

Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the chopped almonds, pecans, chia seeds, flaxseeds, and shredded coconut.
  • In a separate bowl, mix the melted coconut oil, sweetener, vanilla extract, cinnamon, and salt.
  • Pour the wet ingredients over the dry ingredients and stir until everything is well-coated.
  • Spread the mixture evenly on the prepared baking sheet.
  • Bake for 15-20 minutes, stirring halfway through, until the cereal is golden brown.
  • Let the cereal cool completely before transferring it to an airtight container.
  • Serve with almond milk or enjoy as a snack!
