Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup pickle juice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Instructions

  • Cut the chicken breasts into 1-inch bite-sized pieces.
  • In a large bowl, whisk together pickle juice, olive oil, paprika, salt, garlic powder, onion powder, and black pepper.
  • Add the chicken pieces to the marinade and toss to coat evenly.
  • Cover the bowl and refrigerate for 30 minutes to 4 hours.
  • Preheat your grill to medium-high heat (375°F to 400°F).
  • Remove the chicken from the marinade and discard any remaining liquid.
  • Place the nuggets on the grill, leaving space between each piece.
  • Grill for 3-4 minutes on each side, or until the internal temperature reaches 165°F.
  • Remove from the grill and let rest for a few minutes before serving.
