Grilled Chicken Kebabs

Ingredients

  • 1 lb boneless skinless chicken thighs, cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 red onion cut into 1-inch pieces
  • 8 oz mushrooms quartered
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic minced
  • 2 tablespoons honey
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large resealable bag or shallow baking dish, combine the olive oil, lemon juice, garlic, honey, oregano, cumin, smoked paprika, salt, and pepper. Mix well to create the marinade.
  • Add the cubed chicken to the marinade, making sure all the pieces are evenly coated. Cover or seal the bag and refrigerate for at least 30 minutes, up to 4 hours, flipping or massaging the bag occasionally.
  • Soak wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.
  • Preheat your grill to medium-high heat and lightly oil the grates.
  • Thread the marinated chicken and prepared vegetables onto the soaked skewers, alternating the ingredients.
  • Carefully place the kebabs on the preheated grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  • Serve the grilled chicken kebabs hot, garnished with fresh chopped parsley or cilantro. Enjoy with your choice of sides, such as rice, roasted potatoes, or a fresh salad.
