Ingredients

  • 2 slices of whole-grain bread or bread of choice
  • 2 large eggs
  • 1 ripe avocado
  • 1 tbsp vinegar for poaching
  • 1/4 cup fresh fruits berries, kiwi, or citrus
  • 1/4 cup unsalted butter for Hollandaise
  • 2 large egg yolks for Hollandaise
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • Poach the Eggs: Get a saucepan and fill it with water and then add vinegar. Bring the water to boil and poach the eggs for about 3-4 minutes.
  • Prepare Hollandaise Sauce: Butter is to be melted. Egg yolks and lemon juice are whipped together and with the mix, melted butter is added slowly until it becomes thick.
  • Toast the Bread: While the poaching of the eggs is being done, concise the bread and toast till crisp on the out end but hot soft inside.
  • Mash Avocado: Take an avocado and mash it. No watery flesh remains, combine with salt and pepper seasoning and lemon tea.
  • Assemble the Toast: Make sure avocado has been applied on the toasted bread and place poach eggs on top and hollandaise is poured on top.
  • Add Fruit: Complements with fruits such as strawberries or bananas.
  • Enjoy!

Notes

  1. Instead of eggs use tofu and make a plant based hollandaise sauce with dairy-free butter for a vegan flavor.
  2. This recipe suits best gluten-free bread.
  3. Try other tropical fruits like mango.
