Ingredients

  • 1 cup sticky rice glutinous rice
  • 1 cup coconut milk full-fat
  • ¼ cup sugar adjust to taste
  • A pinch of salt
  • 1 cup durian flesh fresh or frozen
  • 1 tablespoon toasted sesame seeds optional for garnish
  • Extra coconut milk for drizzling optional

Instructions

  • Soak the Sticky Rice:
  • Soak the sticky rice in water for at least 4 hours or overnight to soften it. Drain before cooking.
  • Steam the Rice:
  • Steam the soaked rice for about 25-30 minutes, or until it becomes soft and sticky. Ensure you use a bamboo steamer or any available steamer.
  • Prepare the Coconut Milk Mixture:
  • In a small saucepan, combine 1 cup of coconut milk, sugar, and salt. Stir over medium heat until the sugar is fully dissolved. Do not let it boil. Remove from heat.
  • Combine Coconut Milk and Sticky Rice:
  • Once the rice is cooked, transfer it to a large bowl and pour about ¾ of the coconut milk mixture over the rice. Mix gently to allow the rice to absorb the sweetened coconut milk.
  • Prepare the Durian:
  • If using fresh durian, cut it open and scoop out the flesh. If using frozen durian, thaw it first. You can either leave it in chunks or blend it with a bit of coconut milk for a smoother consistency.
  • Assemble the Dish:
  • Divide the sticky rice into 4 servings and place it in bowls or on plates. Add a generous amount of durian on top of the sticky rice.
  • Finish and Garnish:
  • Drizzle the remaining coconut milk mixture over the rice and durian. Garnish with toasted sesame seeds for extra texture, if desired.
  • Serve:
  • Serve the durian sticky rice warm or at room temperature for the best taste experience.
