Soak the Sticky Rice:
Soak the sticky rice in water for at least 4 hours or overnight to soften it. Drain before cooking.
Steam the Rice:
Steam the soaked rice for about 25-30 minutes, or until it becomes soft and sticky. Ensure you use a bamboo steamer or any available steamer.
Prepare the Coconut Milk Mixture:
In a small saucepan, combine 1 cup of coconut milk, sugar, and salt. Stir over medium heat until the sugar is fully dissolved. Do not let it boil. Remove from heat.
Combine Coconut Milk and Sticky Rice:
Once the rice is cooked, transfer it to a large bowl and pour about ¾ of the coconut milk mixture over the rice. Mix gently to allow the rice to absorb the sweetened coconut milk.
Prepare the Durian:
If using fresh durian, cut it open and scoop out the flesh. If using frozen durian, thaw it first. You can either leave it in chunks or blend it with a bit of coconut milk for a smoother consistency.
Assemble the Dish:
Divide the sticky rice into 4 servings and place it in bowls or on plates. Add a generous amount of durian on top of the sticky rice.
Finish and Garnish:
Drizzle the remaining coconut milk mixture over the rice and durian. Garnish with toasted sesame seeds for extra texture, if desired.
Serve:
Serve the durian sticky rice warm or at room temperature for the best taste experience.
