Ingredients

  • 8 oz fettuccine pasta
  • 2 boneless skinless chicken breasts, cubed
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 garlic cloves minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley optional

Instructions

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions, about 8-10 minutes, until al dente. Drain and set aside.
  • In a large skillet, melt 2 tablespoons of the butter over medium-high heat. Add the cubed chicken and cook, stirring occasionally, until the chicken is cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the heavy cream, Parmesan cheese, garlic, salt, and black pepper. Whisk the mixture constantly until the cheese is melted and the sauce is smooth and creamy, about 3-5 minutes.
  • Add the cooked fettuccine and the cooked chicken to the Alfredo sauce. Toss gently to coat the pasta and chicken evenly.
  • Serve the Chicken Fettuccine Alfredo immediately, garnished with chopped fresh parsley if desired.
