Prepare the Dough:
In a small bowl, combine the warm water, sugar, and yeast. Stir and let sit for about 5 minutes until the mixture becomes frothy.
In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil.
Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
Prepare the Sauce:
In a medium saucepan, heat a tablespoon of olive oil over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the tomato sauce, tomato paste, oregano, basil, sugar, salt, and pepper. Let the sauce simmer for about 10-15 minutes, stirring occasionally.
Remove from heat and let cool slightly.
Assemble the Pizza:
Preheat your oven to 475°F (245°C).
Once the dough has risen, punch it down and divide it into two equal portions for two large pizzas.
Roll out each portion on a floured surface to your desired thickness. Place the rolled-out dough on a pizza stone or baking sheet lined with parchment paper.
Spread a generous amount of sauce over the dough, leaving about an inch of the edge for the crust.
Add the Toppings:
Cheese Pizza: Evenly sprinkle the shredded mozzarella cheese over the sauce.
Pepperoni Pizza: Add the shredded mozzarella, then evenly place the pepperoni slices on top.
Combo Pizza: Add the shredded mozzarella, followed by the pepperoni slices, cooked sausage, bell peppers, onions, mushrooms, and black olives.
Bake the Pizza:
Place the pizza in the preheated oven and bake for about 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
Remove from the oven and let the pizza cool for a few minutes before slicing.
Serve and Enjoy:
Slice the pizza into large Costco-style pieces and enjoy!
