Coconut Truffles

Think of dessert truffles that contain shredded coconut, sweetened condensed milk, and vanilla and have been dipped in chocolate - these are called coconut truffles. These truffles are simple to prepare and great for all occasions. Every bite of truffle is gaudy as it combines delicate coconut and luscious chocolate with the option of adding nuts or jimmies on top.

Ingredients

  • 2 cups shredded coconut
  • 1 can 14 oz sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 ½ cups chocolate chips milk, dark, or white
  • Optional: Chopped nuts sprinkles, sea salt for topping

Instructions

  • In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Stir until well mixed.
  • Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  • Chill the balls in the fridge for 30 minutes to firm up.
  • In a microwave-safe bowl, melt the chocolate chips, stirring in 30-second intervals until smooth.
  • Using a fork, dip each coconut ball into the melted chocolate, ensuring it's fully coated.
  • Return the chocolate-coated truffles to the baking sheet and let them chill in the fridge until the chocolate sets, about 15 minutes.
  • Serve and enjoy!
