Coconut Cream Filled Donuts

Ingredients

  • For the Donuts:
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 3/4 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • Oil for frying
  • For the Coconut Cream Filling:
  • 1 cup coconut cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • In a mixing bowl, whisk together flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, mix milk, eggs, and melted butter until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms.
  • Heat oil in a deep frying pan over medium heat.
  • Roll out the dough on a floured surface to about 1/2 inch thick.
  • Use a cookie cutter to cut out donut shapes.
  • Fry the donuts in batches, cooking each side for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
  • In a mixing bowl, combine coconut cream, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  • Once the donuts have cooled, use a piping bag to fill each donut with coconut cream.
  • Optionally, dust with powdered sugar or glaze the tops.
