Ingredients

  • 4 cups rice bubbles or rice puffs
  • 1 cup desiccated coconut
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup icing sugar
  • 1/2 cup butter or coconut oil
  • 1 tsp vanilla extract

Instructions

  • In a large mixing bowl, combine the rice bubbles and desiccated coconut.
  • In a saucepan, melt the butter or coconut oil over low heat. Once melted, whisk in the cocoa powder and icing sugar until smooth and well combined.
  • Remove the chocolate mixture from the heat and stir in the vanilla extract.
  • Pour the chocolate mixture over the rice bubble and coconut mixture, and stir gently until everything is evenly coated.
  • Scoop the chocolate crackle mixture into paper cases or a muffin tin, pressing down gently to compact the mixture.
  • Refrigerate the chocolate crackles for at least 30 minutes, or until they have set.
  • Serve chilled and enjoy!
