These cookies are high in protein and are the ideal healthy snack to satisfy your cravings while providing nutrition to your body. They are also very tasty, having the ingredients natural almond butter, protein powder, and healthy sugars, perfect for a healthy dessert to cap off the workout session or as an on-the-run snack. These cookies are flavorful and dense and can be customized with chocolate chips or nuts for crunch!

Ingredients

  • 1 cup almond butter
  • 1 scoop vanilla protein powder plant-based or whey
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 egg or flax egg for vegan
  • 1/2 cup dark chocolate chips optional
  • 1/4 tsp salt
  • 1/2 tsp baking soda

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond butter, protein powder, honey, and vanilla extract.
  • Add the egg (or flax egg), and mix until a dough forms.
  • Stir in the chocolate chips, salt, and baking soda.
  • Scoop dough onto a baking sheet lined with parchment paper.
  • Flatten each scoop slightly with the back of a spoon.
  • Bake for 12-15 minutes or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For a vegan option, use a flax egg: Mix 1 tbsp ground flaxseed with 3 tbsp water, let sit for 5 minutes.
  • Add nuts or seeds for extra crunch and nutrition.
  • Store in an airtight container for up to 5 days.
